First, the bananas are mashed in a bowl. Then add the eggs and desiccated coconut and stir everything. If the mass is too runny, you can add a little more desiccated coconut.
Then some coconut oil is heated in the pan. Add some of the mixture to the pan and cook the pancakes for two minutes on each side or until golden brown. The recipe makes two pancakes.
The pancakes can now be served with the fresh fruits and berries. If necessary, sprinkle some desiccated coconut on top and the chia seeds for an extra portion of fiber.
