- Peel the bananas, thirds and perfume with lemon and rum. Separate the eggs.
- Make a smooth dough from the sifted flour, egg yolk, sugar, wine, salt and oil. Beat the egg whites into snow and fold into the dough.
- Roll the bananas in flour and carefully pull them through the dough.
- Heat a saucepan with fat (fat is good if you dip a wooden spoon into it and you can see bubbles on it). Bake the thirds of the banana until golden.
- Serve immediately and hot.
- Tip: go with vanilla ice cream or chocolate sauce and cream
