Cut the apple into pieces, mix all the ingredients except the baking powder in a bowl and use the hand blender to make a homogeneous mass. Now, for example, blueberries or other fruits can be mixed in, depending on your taste. Finally, fold the baking powder into the batter and fill the muffin tins. I have enough dough for six muffins.
The muffins are baked for 15-20 minutes depending on the degree of browning required and should then rest in the pan for a while. They taste best warm!
The muffins are wonderfully fluffy and have a very pleasant sweetness. If you like it a little sweeter, you can also add one or two soft dates (e.g. Medjool or Zamli). If you want, you can add an egg to the batter. However, this is not necessary for the consistency - the muffins hold together well even without them.
Since the recipe does not contain sugar, it is wonderfully suitable for babies!
