Instructions

  1. Pour the rice mixture into 250 ml boiling salted water and cook covered over low heat for about 20 minutes until the rice has completely absorbed the liquid. Then let the rice cool down.
  2. In the meantime, cut the basil into fine strips except for a few leaves for decoration. Mix with oil, vinegar, salt and pepper in a large salad bowl. Finely chop the onion, cut the cucumber into cubes. Put both in the bowl with the rice, mix everything well.
  3. Cut the tomatoes into slices and distribute them in portions on plates. Arrange the salad on the tomato slices and garnish everything with the remaining basil.
