Put the chicken pieces in a bowl. Season with pepper and salt. Beat the eggs over the chicken and mix carefully with your hands. Knead in enough flour that the chicken pieces are covered in a thick coat of dough. The egg and flour mixture should be thick enough to stop dripping.
Heat the oil in a pan and fry the chicken for about 15 minutes, turning them frequently. Remove from heat, sprinkle with salt and pepper.
Mix the honey with the mustard and the soy sauce, pour over the chicken and serve immediately.
