Peel the skin off the meat sausage (Lyoner) and cut the sausage into slices. Peel the onions and cut into rings that are not too thick. Mix both in a salad bowl. Mix the oil, white wine vinegar, freshly ground pepper, salt and a pinch of sugar into a spicy marinade. Pour over the Bavarian sausage salad, mix in briefly and cover in the refrigerator for at least 30-45 minutes.
Garnish with finely chopped chives just before serving.
Serve with fresh pretzels or farmhouse bread and a fresh beer.
