Chipotle pods are especially tasty when soaked in apple cider vinegar in a bowl. After a few days they are firm again as they were before drying.
Alternatively, you can quickly soak them in hot water for an hour.
Put all ingredients except the distilled vinegar in a saucepan and simmer with the lid on at low temperature until the mixture is reduced to about 350 ml.
Puree the mixture in a blender to a paste-like consistency. Put the mixture and vinegar in a bowl and stir well.
