Put all ingredients in a saucepan and bring to the boil until the marinade becomes thick. Let cool down. Then finely chop or puree with the hand blender or in the food processor.
Soak the pieces of meat for at least 3 hours, the longer the more flavorful. Thickened or reduced, the marinade can also be used as a sauce.
The sauce can be kept in the refrigerator for about 1 week or you can freeze it.
