  1. In order to bake a good pizza, of course, the dough has to be made first. For 1 tray I use approx. 400 g flour, 1/3 pack yeast, 1 teaspoon salt, 1 teaspoon sugar, 3 - 4 tablespoons good olive oil, lukewarm water as required.
  2. First mix the dry ingredients. Add the olive oil and a sip of water, but not too much, as the dough must not become too soft. Mix everything well and then knead, adding a little more water if necessary, until the dough is smooth and nothing sticks to your fingers.
  3. Then cover with a damp cloth and let rise in a warm place for at least 30 minutes. If you`re in a hurry, you can speed up the process a bit by adding a little more yeast.
  4. For the topping you need 2 white and 3 red onions and 2 - 4 cloves of garlic. 500 g mixed minced meat or ground beef, a pack of smoked bacon, 4 - 5 teaspoons of thyme, salt, pepper, 1 - 2 red chillies, 250 g of pureed tomatoes and a few small fresh tomatoes, 1 - 2 teaspoons of Worcestershire sauce, 3 - 5 teaspoons of ketchup , grated cheese, 2 - 4 teaspoons honey or cane sugar.
  5. Fry the mince and bacon in a little oil. Cut the onions into half rings, finely chop the garlic and add to the meat. Fry everything together until the onions are nice and translucent. Season well with salt and pepper and then add the tomatoes, stir well.
  6. Add thyme, chillies, Worcestershire sauce, ketchup and honey, season to taste again and let everything boil down a little so that the mixture no longer runs off the pizza.
  7. Now roll out the pizza dough to about 0.8 cm thick and press the edge up a little. Spread the minced meat mixture on it. Spread the small tomatoes on top and then sprinkle with grated cheese.
  8. And then bake in the oven preheated to 200 ° C for about 30 - 45 minutes. It is usually ready when the cheese is golden yellow.
  9. Tip: If you have smoked salt, you can use it to season the topping, it gives an even better smoky aroma.
