- Sort the bean sprouts, cut the ham into strips, roll the chives into rolls, quarter the tomatoes, remove the seeds and cut into small cubes.
- Whisk eggs and cream together, season with pepper, salt and nutmeg
- Melt the butter in the pan and add 1/4 of the egg mixture and let it set briefly (1 min.).
- Then put 1/4 of the ham strips and the bean sprouts on top and let them set for another 2 minutes.
- When the omelette starts to set in the middle, remove it from the pan with a spatula and fold it over halfway.
- Make 3 more omelets in the same way.
- Place each omelette on a slice of fresh farmer`s bread and sprinkle with the tomato cubes and the chives.
- With the bean sprouts, you should make sure that you only heat them up for a short time. Not more than 3 minutes. Then they keep vitamins and bite!
