Boil the potatoes as jacket potatoes. Cut the beans into bite-sized pieces and cook them in the stock. Season to taste with a little pepper and place in a bowl. Peel and slice the potatoes and add to the beans.
Cut an onion into fine rings.
Dice the remaining onions and bacon and fry them in the oil until crispy. Add the cream and season with salt (a little!) And pepper. Add to the potatoes and beans and mix the salad.
Serve covered with herring fillets and onion rings. Sprinkle with chives and parsley.
