Instructions

  1. Put the port wine, red wine, veal stock, the diced vegetables and thyme together in a sauté pan, bring to the boil and reduce to 1/3 the amount, strain, set aside.
  2. Salt the steaks on both sides and fry them in the clarified butter on both sides for 2 minutes at a slightly higher temperature. Depending on the thickness of the fillets, place them in the 80 ° oven for 8-12 minutes and turn once halfway through.
  3. Now deglaze the roast with the wine and pass through a sieve to the sauce, which is then reduced by half again.
