Paprikashka is a Hungarian dish, most often made from a piece of raw pork bacon. Later I will tell you a classic recipe for the dish. Today we will make a fragrant beef heart paprika.
Wash the beef heart thoroughly and soak it in cold water for 1 hour.
Drain the soaked heart. In a pot, add the heart with fresh water, 1 peeled onion, 10-15 black peppercorns, and 1 teaspoon vegetable seasoning. Pierce the heart in several places with a skewer. Bring to a boil over high heat, then reduce to medium and cook for 1 hour. Every 10 minutes, skim off foam that rises to the surface.
Remove from heat and let the heart cool in the cooking water. Once cooled completely, remove the heart, rinse under running water, and pat dry.
Cut and flatten the heart to an even thickness.
In a bowl, mix together 1 teaspoon salt, 1 teaspoon ground sweet paprika, and 2-3 minced garlic cloves to make the marinade.
Add 1 tablespoon sunflower oil to the marinade and stir until well combined.
Coat the heart completely with the marinade on all sides, inside and out. Wrap tightly in plastic wrap and refrigerate for at least 2 hours.
