Heat olive oil in a roasting pan over medium-high heat, add the beef slices, and fry until browned, about 3-4 minutes per side. Sprinkle generously with Provence herbs.
Peel and quarter the onions, add them to the pan, then pour the can of tomatoes and the bottle of red wine over everything.
Cover the pan and cook in the oven at 225°C (437°F) for about 2 hours, until the meat easily pulls away from the bone.
