Instructions

  1. Cut the onions into rings. Core the apples and cut into rings. Cut the liver into thin slices.
  2. Mix the flour with pepper. Roll the liver slices in the flour mixture. Heat the clarified butter in a pan over medium heat. Fry the liver 2-3 minutes on each side. Remove from the pan and set aside to keep warm.
  3. Roast the onion rings in the remaining fat over medium heat until golden, about 5 minutes. Add the apple slices and roast for about 2 minutes. Return the liver to the pan. Season everything with salt and pepper. Chop the parsley and sprinkle over the dish.
