Cut the onions into rings. Core the apples and cut into rings. Cut the liver into thin slices.
Mix the flour and pepper and roll the liver in it. Heat the lard in a pan and fry the liver for 2-3 minutes on each side over a medium heat. Take out the liver and keep it warm.
Roast the onion rings in the frying fat until golden. Add apple slices and roast briefly. Add the liver again and season everything with salt and pepper. Chop the parsley and sprinkle over the liver.
