Instructions

  1. For the sauce, peel the garlic, wash the chili peppers and remove the stalk. Crush both well in a mortar and place in a bowl. Mix with the fish sauce, lime juice and sugar.
  2. Halve the onions lengthways, peel and cut into fine strips. Wash the chives and cut into 3 cm long pieces. Wash and roughly chop the coriander. Rinse beef fillet with cold water and pat dry. Then remove the skin and tendons and cut into steaks about 2 cm thick.
  3. Let the oil get very hot in a large, heavy pan (wok) and fry the steaks medium on each side for about 3 minutes on each side. Let cool and cut into thin strips.
  4. Add the beef strips, onions, chives and coriander to the bowl for the marinade and mix everything well.
  5. With this dish, the quality of the meat is crucial because cheap frozen fillet from the discounter spoils the taste. Pay attention to a dark red color when buying. This is a sign that it is well hung.
