Cut the meat into strips. Mix 3 tablespoons of soy sauce, 3 tablespoons of rice wine, 1 teaspoon of cornstarch and 1 crushed clove of garlic. Marinate meat in it for 1 hour.
Drain and fry in 2 tablespoons of oil in portions for 2 minutes. Remove. Fry the carrots and onions in the remaining oil for about 3 minutes, then squeeze in the second clove of garlic. Mix the hoisin sauce, beef stock or broth, the rest of the soy sauce, starch and rice wine, pour over the vegetables and bring to the boil. Add the beef, heat briefly and season well.
