Instructions

  1. Soak the beetle beans overnight (at least 12 hours) in plenty of cold water. Then cook the beans in lightly salted soaking water until they are soft - this takes approx. 1 - 2 hours, depending on the size and age of the beans. Let the beans cool a little in the cooking water.
  2. In the meantime, dice the onions and garlic and then heat them with the olive oil. Add the pitted and chopped tomatoes and season well with salt and pepper. Simmer for a few minutes.
  3. Fold in the beans and pour the mixture into a baking dish. Bake in the preheated oven at 200 ° C for about three quarters of an hour. It goes well with crispy white bread or rice.
