Cut carrots, potatoes, beetroot and onions into cubes and fry in a saucepan. Finely chop the garlic, add and fry briefly.
Deglaze with a little vinegar. Pour on the tomatoes and stretch with water if necessary. Add the salt and the other spices. Simmer on a low level for approx. 20-30 minutes.
Add the red lentils as desired. If necessary, stretch again as the lentils draw a lot of water. Let simmer for about 10-15 minutes.
