- Wash the beetroot thoroughly and wrap each tuber tightly in a piece of aluminum foil.
- Put the beetroot on a wire rack in the oven (middle rack) and bake at 200 degrees (gas 3) for 70 minutes.
- Cut the chives into rolls and mix with the crème fraîche, pepper and salt.
- Break up the beetroot and serve with the crème fraîche mixture.
- This goes well with whole grain bread and a strong red wine.
