2. Mix together with ¾ of the lime juice, salt, pepper and oil and set aside.
3. Then prepare the ricotta filling. Mix the ricotta and cream cheese together with the finely chopped herbs, pear, a dash of lime juice, garlic and parmesan and set aside.
4. To serve, cut fine slices of the beetroot, if necessary cut out rounds. Place a slice on the plate and place in the middle of the ricotta mixture. Place a second slice of beetroot on top.
5. Then pour the sauce over it and serve with the parmesan and herbs.
