Instructions

  1. Put beetroot in hot water and cook in it for at least 30 minutes, they are not quite through then, but I like it that way. If you want it cooked more, you should cook it for 45 minutes.
  2. Chop the onion and grind with the tahini, oil, water, lemon juice, lemon zest and garlic in the food processor to make a salad dressing. Roughly shred a good amount of the parsley, put half in a salad bowl and chop the other half again in the food processor and in the sauce. Wash the sprouts and put them in the salad bowl with the chopped apple and radishes, pour sauce over everything and season with salt and pepper.
  3. After cooking, let the beetroot cool a little, then peel and cut into cubes. Put everything in the bowl and stir well, I prefer to eat it with pita bread
