Peel the peppers with the peeler and cut into small cubes.
Peel and grate the carrots. Peel the onions and finely dice them.
Put the diced onions in a bowl, add salt, pepper, crushed garlic clove, soy sauce, mustard, sugar, lemon juice, vinegar and oil and stir vigorously. Mix in the bell pepper, carrots and sunflower seeds. Finally refine with a little chives.
Let the salad stand for about 1/2 hour before eating.
