Instructions

  1. Wash, core and roughly chop the peppers and place in a saucepan. Cut the garlic into small pieces. Core the chilli pepper and cut into small pieces. Add both to the peppers. Add the star anise and agave syrup. Cover everything with water and bring to the boil, then cover and simmer for 1 hour over a low heat.
  2. Remove the star anise and take the paprika, garlic and chilli pepper out of the pot with a slotted spoon and place in a blender. Add the tomato paste and puree. Add a little brew until it has a ketchup-like consistency, the ketchup thickens a little when it`s cold. Season the ketchup with a dash of lemon juice and salt.
  3. A low-sugar, yet delicious ketchup, in which the sweetness comes from the peppers.
