Cook the pasta in salted water according to the instructions on the packet. Peel and chop peppers, avocado and onions.
Fry the onions and pine nuts in a little olive or coconut oil until the onions are translucent and the kernels are lightly toasted. Add the peppers and fry for about 5 minutes. Strain the finished noodles and add them to the vegetables.
Add the avocado, cream cheese, and spices and stir in. Finally add the chopped mozzarella, stir everything until the cheese has melted and round off with parsley.
