Take the seeds out of the cardamom pods, roast them together with cumin, cloves, allspice and fenugreek seeds in a pan for about 1 minute, let them cool and grind them finely. This works best in a mortar or a spice grinder.
Mix the onions, peppers, garlic and ginger with the mixer to a paste. Mix the finely ground spices into the paste and add the remaining spices, as well as the oil and wine. Add a little cayenne pepper depending on the degree of spiciness you want.
