Instructions

  1. Cook the spaetzle with a little salt according to the instructions on the package. Leftovers from the previous day are also suitable.
  2. Peel and cut the onion. Clean the mushrooms and quarter them depending on the size.
  3. Heat a little oil in a large pan with a high rim. Fry the diced ham and the onion in it. When the onions are slightly colored, add the mushrooms and fry them. When everything is lightly brown, add the cooked spaetzle. Fry briefly, seasoning with salt, pepper and paprika powder and stir a few times. Do not use too much salt as the ham cubes are already salty.
  4. When everything is hot, beat the eggs over the pan and stir so that the egg spreads. Turn until the egg is firm.
  5. Now spread the grated cheese on top. When you see that the cheese is getting soft, stir it once and the spaetzle pan is ready.
