Instructions

  1. Soak the gelatine in cold water according to the instructions on the packet.
  2. Wash the limes with hot water and dry them. Finely grate the peel of a lime and squeeze out the juice from all 3 fruits. Slowly heat about 100 ml of it in a saucepan with the grated lime zest (do not boil!).
  3. Drain the gelatine sheets, add them to the hot lime juice and dissolve while stirring.
  4. Separate the eggs. Whip the egg yolks with the sugar and vanilla sugar until creamy. Beat the lime juice, which is still warm, under the egg cream and refrigerate for 15 minutes until it starts to gel.
  5. Whip the egg white and cream separately and fold into the cream.
  6. Chill for about 2 hours and garnish with lemon balm.
