Instructions

  1. Peel and core the apple and then roughly dice. Peel the onion and then roughly dice it. Peel the carrot and cut into thin slices at an angle. Wash the cucumber, cut in half and cut into slices. Clean the mushrooms and cut into slices. Wash and clean the broccoli and cut into small florets. Peel and grate the ginger. Halve the lime and squeeze out the juice. Wash the pak choi, spin dry and pluck the leaves into pieces. Drain the tofu and cut into cubes.
  2. For the sauce, mix apple, onion, 1 tablespoon soy sauce, lime juice, 1 tablespoon sesame oil, 1 teaspoon sambal oelek and some pepper with the hand blender to make a sauce.
  3. Roast the sesame seeds in a pan without oil, remove immediately from the pan and let cool. Cook the rice in plenty of salted water according to the instructions on the packet. Heat 1 tablespoon sesame oil in the pan and fry the carrots in it for about three minutes. Now add the mushrooms and ginger and fry for about three minutes. Take everything out of the pan and keep warm.
  4. Heat 1 tablespoon sesame oil in the pan and steam the pak choi, add honey and sambal oil and deglaze with the soy sauce. Take out of the pan and keep warm. Cook the broccoli in boiling salted water for about four minutes, then rinse with cold water and keep warm. Fry the tofu in 1 tablespoon sesame oil in a pan and keep warm. Fry the eggs in 1 tablespoon sesame oil in a pan with fried eggs.
  5. Divide the rice between two bowls. Spread all ingredients in a circle next to each other on the rice. Finally, put a fried egg in the middle. Sprinkle with sesame seeds and spread the sauce over them.
