Instructions

  1. For the chocolate base, preheat the oven to 180 degrees. Then beat 150 g sugar with eggs and salt until frothy. Melt the chocolate with the butter in a double boiler and stir this into the sugar-egg mixture. Place the dough on a baking sheet lined with baking paper and bake on the middle rack for about 20 minutes.
  2. For the cherry cream, drain the cherries and collect the cherry juice. Bring the juice to the boil and then add 50 g sugar, red wine, cherry brandy and the cinnamon stick. The whole thing should simmer for a few minutes. Then remove the cinnamon stick. Mix the cornstarch with 2 - 3 tablespoons of water and add to the saucepan. Then add the cherries and cook for about 1 minute.
  3. Then let the cream cool down.
  4. For the cream, whip the cream until stiff and then mix and fold in the sour cream and 50 g sugar.
  5. When the chocolate base has cooled down, cut out small circles and, starting with the base, layer alternately with the cherry and cream cream in glasses.
