Clean the radish, peel it if necessary (if the black color bothers you) and grate it finely, preferably with a food processor. Salt the rasped radish well and mix well, leave to stand for about 15 minutes.
Finely dice the onion and mix with the remaining ingredients in the salad bowl to make a salad dressing. After the steeping time, add the salted radish together with the liquid to the salad dressing and mix well, seasoning if necessary. Can be served straight away, but we like it best when it has been through for a few hours. Then season again if necessary, as the radish will continue to water.
Just add fresh farmer`s bread, thickly buttered, and the meal is complete.
