Cut the cucumber first into slices, then into small cubes. Pour into the 4 glasses as the first layer. Dice a tomato for each serving and place on top of the cucumber.
Mix yoghurt, quark and finely chopped herbs into a creamy dressing and season with salt and pepper. Spread over the tomatoes except for a small remainder. Then put a slice of smoked salmon cut into small pieces. Cut the spring onion into rings, spread over the salmon. Splot the rest of the dressing onto the onion rings, garnish with cucumber slices, a few spring onion rings and fresh dill.
If you like, you can top it with freshly ground pepper.
Very tasty and optically also a great eye-catcher for every buffet.
