Instructions

  1. Place the base on a cake plate and enclose it with a cake ring.
  2. Dissolve the gelatine in 250 ml blood orange drink as instructed.
  3. Mix the quark, sugar and buttermilk with a whisk and add the dissolved gelatine while stirring.
  4. Whip the cream until stiff and then fold in when the cream starts to set.
  5. Now put the mixture on the sponge cake and place in the refrigerator for at least 3 hours.
  6. Then make the icing with the remaining 150 ml blood orange drink and the syrup and cover the cake with it. Put the cake in the fridge for another 30 minutes.
  7. Before serving, sprinkle the brittle on the outer edge of the cake and put a sprig of lemon balm in the center.
