Peel and finely mash the banana. Wash the apple and grate it roughly.
Mix the banana, apple and egg in a bowl. The dough can now be refined with a little lemon zest or cinnamon. Mix the flour and baking soda into the mixture.
Heat a pan with a little fat. Caution, the pan must not get too hot, the pancakes must be baked slowly. Now distribute the dough in portions with a spoon in the pan. I prepare 8 pancakes from the mixture. Cover the still liquid pancakes with the blueberries. Bake the pancakes over low heat. It is best to cover the pan with a lid. As soon as the pancakes are set, turn them and briefly bake the second side.
Serve the pancakes warm, but they also taste good cold. This goes well with chopped fresh fruit, yoghurt, sauces made from pureed fruit, applesauce, coconut flakes or quinoa pops.
