Instructions

  1. First mix the water with the vegetable stock in a saucepan and bring the whole thing to a boil. Then add the rice and cook until cooked.
  2. In the meantime, dice the onion, cut the peppers into fine strips and quarter the zucchini and then cut into small pieces. Dice the tomato.
  3. Heat a little olive oil in the pan and first steam the onion in it a little. Then fry the peppers and zucchini for a minute or two. Then add the tomato.
  4. Put the pepper, salt, curry and Tabasco on the vegetables and mix the tomato sauce into the pan. A pinch of parsley on top. Simmer for another 5 minutes on low heat and drain the rice.
  5. Serve both together. Also works well with gnocchi or pasta.
