Braised Balsamic Tomatoes
Instructions
- Preheat oven to 180°C (350°F) with fan circulation.
- Wash 36 cocktail tomatoes and dry them thoroughly; transfer to a baking dish.
- Peel 2 garlic cloves, slice thinly, and add to the tomatoes.
- In a small bowl, combine 3 tablespoons balsamic vinegar with sea salt and sugar to taste.
- Strip leaves from 10 sprigs of thyme and add to the balsamic mixture; whisk in 4 tablespoons olive oil.
- Pour the sauce over the tomatoes and toss gently until lightly coated.
- Braise in the preheated oven for 15-20 minutes until the tomatoes pop open easily.
- Remove from oven and let cool in the balsamic mixture.
- This dish can be prepared up to 1 day ahead and refrigerated.
- Transfer the tomatoes to small serving plates.
- Cut the basil leaves into fine thin strips and garnish the tomatoes with them.
