Brazilian Pork Cutlets on the Bone Instructions

  1. Preheat grill to medium-high heat. Oil the grill grate with vegetable oil. In a bowl, combine olive oil, garlic, thyme, rosemary, paprika, and cayenne pepper. Season pork cutlets with salt and pepper on all sides, then brush with the herb mixture. Set aside.
  2. Place pork cutlets on the grill, cover, and cook for 4 minutes. Flip and cook uncovered until the internal temperature reaches 63°C (145°F), about 4-6 minutes. Transfer to a plate and let rest for 5 minutes. Serve immediately.
