Place a layer of toast, buttered side up, in a 2 liter buttered casserole dish, sprinkle with raisins, then repeat until the pan is almost full. Press the lemon rind in half on the right and left side of the edge.
Whisk the milk, eggs and sugar (white) together, place on the bread mixture, sprinkle with the brown sugar and then bake in the oven for 30 minutes at 210 degrees Celsius.
