Cut the bread into cubes and fry well on all sides in the butter in a coated pan and set aside.
Wash and dice the tomatoes. Roughly crumble the sheep`s cheese or cut into small cubes. Wash the oregano, pat dry and pluck the leaves off.
Put tomatoes, bread and sheep cheese in a bowl. Peel the garlic clove, press and add. Add oregano, sugar, vinegar and olive oil, mix vigorously and season with salt and pepper.
