Instructions

  1. Cut the rolls into thin slices, pour the milk over them and let them steep. Fry the onion cubes in butter until golden.
  2. Cut ham and cheese into cubes and add to the rolls with onions, flour, eggs and herbs and work in with your hands. Season the mixture with salt, pepper and nutmeg and shape into dumplings with wet hands.
  3. Let the dumplings simmer in slightly boiling salted water for 15-20 minutes.
  4. The dumplings can be served as an accompaniment to meat dishes or as a main course (then pour 80 g of browned butter over them) with a green salad.
