Mix flour, salt and water with yeast loosely (do not knead!). Cover the dough with a cloth and let rise at room temperature. After 24 hours, knead the dough only briefly.
Preheat the oven and a cast roaster to 250 ° C (top / bottom heat). Tip the dough into the hot pot, put the lid on (so that the moisture is not lost) and bake for 1 hour.
