Cut circles out of the bread or pumpernickel with a mold or glass - these should be about the same size as the cucumber slices later.
Also cut out circles of the same size from the cheese.
Cut 3/4 of the cucumber into slices (the remaining quarter of the cucumber is still needed).
Now put a circle of bread on a plate, brush with cream cheese, put a circle of cheese and a slice of cucumber on top. Repeat the process until a tower is about 8-10 cm high. Repeat the same for the 2nd tower.
Cut 2 cubes of approx. 2x2cm from the remaining cucumber and peel (you can leave a small piece of the peel on it as a window) and place on the towers. Spread some cream cheese on the cucumber cubes and cut 2 roofs out of the remaining bread and place them on top of the tower.
Now 4 slices of sausage / cheese are twisted into a sachet and put with the ends on a toothpick. The sausage slices are at the last end of the toothpick and are then covered with half a cocktail tomato.
The longer end of the toothpick is now inserted into the upper third of the bread-cheese-cucumber tower. Another toothpick can be used for a better hold.
