Cut the feta cheese into four equal pieces. Turn the pieces first in the beaten egg and then in a little breadcrumbs. Repeat the whole thing once. Fry the breaded feta pieces in hot olive oil for about 3-4 minutes on each side until golden brown. Wash and spin the rocket, then divide it between two plates. Pour the crema di balsamic vinegar over it and sprinkle with the parmesan. Peel the onion and cut into cubes. Wash the tomatoes, remove the seeds and also cut into cubes. Chop the basil into small pieces. Place the fried feta cheese on the bed of rocket and serve sprinkled with the onions, tomatoes and basil.
