Cut the roll of soft goat cheese into approx. 0.5 cm thick slices. Turn the slices first in the flour, then in the beaten egg, then in the breadcrumbs seasoned with pepper and paprika, so that there is a nice breading around the slice.
Fry the breaded slices in plenty of oil until crispy.
In the meantime, quarter the tomatoes, cut the onions into half rings and the garlic. First sweat the onions briefly in oil, then add the tomatoes and garlic. Season with salt and pepper and add a small dash of vinegar. At the end, sprinkle a pinch of sugar on top and fry everything a little more.
Arrange both together on a plate. I prefer to have a baguette with it.
