Instructions

  1. Finely dice the parsnip, carrot, broccoli and leek. Cook everything in a medium saucepan for about 10 minutes. In the meantime, cut the mozzarella and parsley into small pieces and season with salt and pepper. Soak the spelled or spelled mixture in 100 ml water for 5 minutes. Mix the cooked vegetables with the cheese mixture, the egg and spelled, add 1 tablespoon of olive oil and 3 - 4 tablespoons of breadcrumbs. Season the whole thing again with salt and pepper. Shape into small balls and toss in breadcrumbs. If the balls are still too loose, knead them with a little breadcrumbs and then bread them. Heat the remaining olive oil in a shallow pan over medium heat and fry the balls in it until golden brown.
  2. Instead of the vegetables mentioned, you can of course also take 300 - 400 g of other vegetables.
