Instructions

  1. Mix both types of flour and salt. Warm the vanilla milk slightly, crumble fresh yeast and dissolve in it. Add to the flour mixture along with honey, quark and melted butter. Then add the well-mashed banana with lemon juice and, if you like, some lemon zest. Knead everything well and cover and let rise in a warm place for at least an hour until the volume has increased significantly.
  2. I always cover my bowl with a double layer of damp kitchen roll paper and place it on the heater. If the kitchen towel is dry, moisten it again if the dough is still flat.
  3. Then shape small balls or rolls out of the dough, moisten a little with water or milk and roll in sesame seeds. Place on a baking sheet or in greased muffin cups. Cover and let rise for another 30 minutes.
  4. Bake in a preheated oven at 200 ° C for about 25 minutes. Pour a cup of water onto the bottom of the oven or a tray placed under the muffins as you slide it in.
  5. Tastes good still warm or baked with butter or cream cheese with a little apricot jam.
