Beat the eggs for three minutes until frothy, stir in sugar and vanilla sugar. Add the mascarpone and stir to a homogeneous mass.
Add the ground nuts or almonds, mix the flour and baking powder and sift into the mixture, stir well. Finally add the milk. The quantity 125 ml milk is not set in stone. Depending on the consistency of the waffle batter, it can be more or less milk.
Bake the finished dough in the waffle iron. Serve warm, side dish of your choice, e.g. simply with powdered sugar, with honey or with vanilla ice cream and with hot cherries.
