Instructions

  1. First of all: The beetroot is served as a side dish and not stirred into the Labskaus or cooked with it.
  2. Peel the potatoes, cut into pieces and cook in salted water until cooked. Meanwhile, finely dice the onion and fry it in a separate saucepan with butter until translucent. Add the corned beef to the onions and mince over low to medium heat until it can be mixed with the onions. When the potatoes are cooked, drain them and put them in a bowl with butter and milk to make mashed potatoes. Don`t make it too runny! Salt and pepper a little. Add the corned beef with the onions and mix everything well with a spoon.
  3. The Labskaus is actually ready now and can be served with fried eggs, beetroot, pickled cucumbers and herring fillet.
  4. But try the baked variant! It is also easy to prepare: Put the Labskaus described above in a baking dish (you can do this the day before or in the morning) and top it with flakes of butter. Bake the casserole dish for 1 to 1 1/4 hours at 200 degrees in the oven on the middle rack. That makes a delicious potato crust and it looks better. The crust has to be nice and crisp, otherwise leave it in the oven for a few minutes longer.
  5. Serve with the same side dishes.
  6. Tip: There is more crust in a large baking dish, children especially love that!
