An excellent hearty dish, which is not difficult to prepare, is a brizol stuffed with mushrooms and pickles. Delicate egg pancake with juicy minced meat batter and an appetizing filling of fried mushrooms, pickles, and cheese. Such a dish will help make the morning of the weekend or even a weekday much more pleasant, because it does not take long to cook.
Slice the mushrooms (champignons) and fry in a skillet over medium-high heat in a mixture of 2 tablespoons vegetable oil and 10 grams butter for about 5-7 minutes until golden brown. Set aside.
Grate the hard cheese on a coarse grater. Cut the pickled cucumbers into strips. Press or grate the peeled garlic on the finest grater.
In a bowl, combine the fried mushrooms, half of the grated cheese, the pickled cucumber strips, garlic, 2 tablespoons sour cream, and 2 teaspoons granular mustard. Season with salt and black pepper to taste. Stir well.
Place one quarter of the minced meat on a plastic bag, cover with another plastic bag, and roll flat with a rolling pin into a thin pancake the same size as the bottom of your skillet.
Beat one egg in a bowl with a pinch of salt and 1 tablespoon of milk. Whisk until well combined.
Melt butter in a skillet over medium heat and pour the egg mixture into it to form a thin pancake. Cook for about 2 minutes until the top is mostly set but still slightly wet.
Gently place the minced meat pancake on top of the egg pancake. Fry over medium heat for 2-3 minutes.
Transfer to a plate with the minced meat side facing up. Place one quarter of the mushroom filling on half of the pancake. Sprinkle remaining cheese on top. Fold the other half of the pancake over the filling.
Repeat steps 4-8 three more times to make 3 additional brizols.
Optional simplified method: Combine all remaining minced meat with all remaining beaten eggs (beat with remaining milk and salt first). Mix well. Fry portions of the meat-egg mixture in the skillet over medium heat, forming pancakes from the mixture. Once cooked, place mushroom filling inside each pancake and top with remaining cheese.
