Wash the broccoli and cut into small florets. Chop the onion and sweat it with the broccoli and butter. When the onions are translucent, peel and squeeze the garlic. Add the vegetable stock and simmer for about 20 minutes.
Peel the potato and rub it into the pot. Then puree everything with a hand blender. Now the spices are added. At the end, remove the stems from the washed rocket and add it to the pot. Puree again and let it steep a little.
